Pumpkin Cream Cheese Pie w/ Gingersnap Cookie Crust

This pie just screams "the holidays are here!" It starts with a buttery, gingersnap cookie crust and is filled with a spiced pumpkin cheesecake filling and then topped with fresh whipped cream and gingersnap cookie crumbles. No doubt this pie will be on my Thanksgiving table!

This pie starts with a buttery handmade pastry and is filled with cinnamon spiced Granny Smith Apples, drizzled in homemade caramel sauce, topped with an oatmeal crumble, baked off, and then topped with more caramel and a light sprinkling of flaky sea salt... oh my - just describing this pie has my mouth watering!
