I would say this is the most popular cake I make! It is LOADED with freshly grated carrots, plump raisins, and chopped pecans. It has a very slight orange flavor from the addition of fresh orange juice to the batter and orange zest to the cream cheese frosting. The cake is then topped off with a cream cheese frosting and adorned with more chopped pecans - delicious!
